Can Bisquerra

 

Today, four generations of bakers have passed through the Can Bisquerra facilities, all of them called Llorenç, as they are known in the village.

In 1927, Llorenç Amengual Barceló, the first of the saga, decided to open a bakery in Jonquet street in Pollença. He came from Caimari, where they already had another one. Many years have passed since that first moment as well as different Llorenç until the current baker. He remembers that even as a child he liked to play with dough.

While the other children were playing with a ball, he spent his time with his grandfather, watching how he made ensaimadas and learning from him.

But his great teacher was his father, who taught him everything he knew about pastry making. Interestingly, he remembers is that in the 1950s his father travelled to Montreal to broaden his knowledge of pastry-making and there he made a cake for the Queen of England.

Llorenç decided to become a baker because he it had been in his blood since he was a child and because of the creativity of the work. He says that the smells and the fact of satisfying customers are two of the things he likes most about his profession. He is the person who sweetens the life of the people of Pollensa.

Can Bisquerra was born as a family business which, despite changing hands, still preserves the family character and the tradition of its products. They specialise in plain and stuffed ensaimadas, as well as other products such as lemon pie, cardinal, leaf pastry, gypsy’s arm and personalised cakes, among others.
